Vegan panzanella

I love a good panzanella! How can you easily make it vegan, just as tasty and within 15 minutes? This is how you can make your vegan panzanella!

What do you need?

For 2 servings

  • 1 can of white beans
  • 2 tomatoes
  • 1/3 cucumber
  • 2 slices of (gluten free)
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 ts garlic puree
  • handful of fresh basil
  • 1 tbsp Tuscan herb mix

How do you make the vegan panzanella?

  • Toast the 2 slices of bread
  • Wash and drain the white beans and put them in a bowl
  • Cut the tomatoes and cucumber into little pieces and add to the bowl as well
  • Add the lemon juice, olive oil and herbs
  • Mix everything well together
  • Serve the bread on the side

This dish looks exactly like a real panzanella. Obviously we leave it without the cheese, but instead of that we have a high protein recplacement in the name of white beans. It is funny, I never used to like these. But with the right dressing and other ingredients, it is a very yummy treat! Also, the bread that I used for this recipe is so so yummy! It is a gluten free oatbread with dates and chia and once toasted the cinnamon smell fills the room and it is like you are eating a cinnamon raisin bagel. The. Best!

For this recipe you will toast your slices of bread. Put them in the toaster and let the toaster do its thing. You can then choose to serve the bread on the side or cut the bread into cubes and put it in the panzanella as it was actually made to do so. For the salad itself, you can open the can of white beans and put them in a cif to wash and drain them really well. Then put them in a salad bowl.

Get the cucumber and tomatoes out there and cut them in smaller pieces and add them to the salad bowl as well. Then you can add the lemon juice, olive oil and all the herbs and spices. Make sure you rinse the fresh basil and cut it small as well. Mix everything well together and add either the toast on the side or as cubes in the panzanella salad. Enjoyce!
