Thai seasoned tofu cubes with a yummy thai salad mix in a mexican taco with guac. I call this healthy 15 minute dish mixed fusion with the best flavours of Mexico and Thailand. Let’s make these Thai Tofu Tacos!
What do you need?
For 4 people:
- 12 mini corn tortillas
- 250 gr tofu
- 1 tbsp tamari sauce
- 2 tbsp olive oil
- 1 tbsp paprika powder
- 1 tsp ginger
- 1 tsp crushed garlic
- 1 tsp cumin
- 250 gr thai salad mix
- coconut yogurt
- 1 avocado
- salt and pepper
- optional: fried onions
How do you make the thai tofu tacos?
- Cut the tofu into cubes
- Mix the tamari sauce, olive oil and herbs together
- Marinate the tofu in the sauce mix
- Grill the tofu in a saucepan until nice and brown
- Mash the avocado soft until guacemole and season with salt and pepper
- Soften the tacos in the microwave according to your instructions
- Put a little avocado on each taco, add the lettuce mix, tofu, fried onions and top if off with a dallop of coconut yogurt
If you know me a little by know, then you’ll know that I like to fuse different cuisines with each other. Especially my 3 favorite ones which are: Italian, Mexican and Asian. Although Mr. Italian is not with us today, Mrs. Mexican and Miss Asian definitely are. I took the guac and the tacos from South America and the salad and spices from South Asia. Combined you will get a plate full of flavours that will make your taste buds and heart happy, but also your body will thank you!!
Ginger has anti inflammatory and healing functions and the avo and coconut will give your brain and energy a boost. Tofu is there for the protein mostly, leafy greens will never underestimate you and have so many benefits for every cell of your body that it is almost rude to mention as we want every ingredient to feel and be equal ;). The tacos are your healthy carb and because they are made of corn, it is soothing for your tummy and corn is rich in B12 which means even more energy right there for you! It also helps creating a healthier skin so we love that too. I want to eat everything that helps me create a shiny skin and reduce my acne!
To make these yummy things, you actually only need to bake the tofu and prep a little bit whilst letting them cook. That means that if you are a really quick learner, you can have this meal on your table in pretty much 15 minutes! Say what now?! Okay, let’s get cookin’! Cut the tofu into cubes and set aside. Grab a bowl and add in the tamari sauce, olive oil, paprika powder, garlic, ginger and cumin. Add the tofu in there and marinate the tofu well into the sauce. Then grill it in a saucepan until it becomes a little bit brown and crunchy.
Meanwhile you can get started on prepping the rest. Get your tacos and put them on a plate and cover with some kitchen towel. Put it in the microwave for 40 seconds to heat them up and to soften. Cut open the avocado, grab a mini bowl, scoop everything out and mash it into a guacemole. Season it with some salt and pepper to taste. Scoop some avocado in the middle of each taco and then add the Thai salad on top of that. When the tofu is ready you can divide that of the tacos as well. Lastly top it off with a dallop of coconut yogurt and some friend onions.
