These cookies are the best cookies I have had in a while. Melted dark chocolate, a crispy texture and the sweetness of berries. These protein chocolate berry cookies are mouth wathering!
What do you need?
For 4 big or 8 small cookies
- 125 gr dairy free yoghurt
- 2 scoops plantbased protein powder (I used salted caramel)
- 1 scoop buckwheat flour
- 25 gr 80% chocolate
- 1/4 cup blueberries
- 1 ts baking soda
How do you make the protein chocolate berry cookies?
- Preheat the oven at 200 degrees
- Grab a bowl and mix the protein powder, buckwheat flour and baking soda with each other.
- Stir and mix in the yoghurt
- Use your hands to make it a dough
- Break the chocolate into little pieces and stir in the dough together with the berries
- Make 4 or 8 cookies out of the dough and place them on a baking tray with baking paper
- Bake the cookies for 30-45 minutes until golden brown
It was a busy Saturday morning when I made these cookies. I wanted to see if they possibly could be a good snack. So after my delicious routine of a Body Pump class and a coffee at my favourite local coffee place, I made my way home to clean the house. In the midst of that I felt really hungry and I decided on a spree to make cookies for breakfast. I wanted to make sure there was enough protein in them and that they were nice, sweet and crispy.
I think it took me about 5 minutes to decide which ingredients I needed for this. These for me are the best ways of cooking and baking. An idea of what you want and then just making something up. I love it! And of course I had to share this recipe with you, especially after they were a succes straight from the start! The protein powder gives the cookies some body and sweetness and of cours the protein needed. The yoghurt makes the dough very malleable and easy to work with and of course again: protein! Then I used some buckwheat powder to make sure the cookies became crispy. You can also use oats or another type of (gluten free) flour. The chocolate and berries are for the cheeky sweetness, making them a great pick me up snack. Or, just a very filling breakfast if you have some more. A great way to treat yourself on the weekend like I did!
For the cookies you will preheat the oven at 200 degrees. You grab a bowl and put in the buckwheat flour, protein powder and baking soda. Give it a good stir and than you can add in the yoghurt. Try and stir it as much as possible and then use your hands to make it a good dough which should be turning into a ball. Break the chocolate into little pieces if not already and then stir those into the dough together with the berries.
Grab a baking tray and put some baking paper on this. Divide the dough into 4 or 8 parts depending on how big you want your cookies to be (as if this really is a question) and make cookies from your dough. Put the cookies on the baking paper and bake the Protein Chocolate Berry Cookies for about 30-45 minutes until golden brown.
