Buddha bowls are maybe one of my favorite dinners of all. They’re diverse and you can always make a new buddha bowl party with different veggies and toppings. This one is really easy to make and even more delicious to eat.
What do you need for the tempeh buddha bowl?
For 4 people
- 1 block of tempeh
- 1,5 cup of uncooked rice
- bag of lettuce
- bag of frozen mixed veggies
- 1/2 lemon
- 4 tbsp tamari
- 2 tbsp maple syrup/honey
- 8 tbsp coconut yogurt or alternative
- 1 ts paprika powder
- 1 tsp crushed garlic
- 1 tbsp curry powder
- optional: sesame seeds
How do you make the easy tempeh buddha bowl?
- Cut the tempeh into slices
- Make a marinade with combining the tamari with the maple syrup, lemon juice, paprika powder and crushed garlic
- Put the tempeh in the marinade and let it sit for at least 30 minutes
- Cook the rice according to the package
- Bake the tempeh crispy on both sides in a pan
- Stir fry the frozen veggies with some coconut oil and the curry powder
- Set up your buddha bowl with the rice, the veggie mix, tempeh, lettuce, some coconut yoghurt and sesame seeds
When I think about dinner I wanna have a diversity of different veggies, rainbow colored by preference. This is my brain thinking because it know how much I thrive by eating veggies to keep on doing the things I mostly love. My heart sometimes loves veggies. My heart mostly loves good taste and sweet things, so in order for me to eat a healthy lifestyle I need a balanced and diverse platter. A buddha bowl is perfect because I can eat so many different veggies, have the sweet taste because I marinated my protein in something lovely like maple syrup or honey and with the right herbs and spices I’ll add great flavour. The only downside with making a buddha bowl is that it involves a lot of different ingredients which can make this meal a little bit time consuming. This option though is doable for everybody as it is really easy, not time consuming and every cook will be able to make this yummy meal.
To make this easy tempeh buddha bowl, you’ll start with marinated the tempeh. You can do this the evening or the morning before so that you can start right away with making your meal. You do this by cutting the tempeh into slices. The marinate you will make by grabbing a bowl and add the tamari, maple syrup, paprika powder, crushed garlic and lemon juice into it. Put the tempeh in the marinate and let it sit. When to taste you will fry this with some coconut oil until it is nice and crispy.
Cook the rice according to the package and let it just do its thing. Then there is the mixed veggies left. Because you chose a frozen mixed veggies package, there is no need for cutting and you have a variety of veggies right there. You will stir fry them for a few minutes with some coconut oil and the curry powder. When all is done, you can set up the buddha bowl. Put the rice in the bowls and add on the crispy tempeh and mixed veggies. Also add on some lettuce. Top the easy tempeh buddha bowl with some coconut yoghurt and sesame seeds.
