This easy meal consists of so many different flavours that it is such a nice way to swap a traditional chicken with rice bowl to a chicken with salad bowl. Let’s make this curried chicken salad bowl!
What do you need?
For 2 people
- 300 gr chicken
- 1 tbsp curry powder + 1 tbsp smoked paprika
- 1/2 cucumber
- 1 apple
- 2 handful of almonds
- 1 cup rocket mix
- 1 cup cooked quinoa
- 2 tbsp olive oil
- 2 tbsp coconut yogurt
- 1 tbsp tahini
- 1 tbsp lemon juice
- 1/2 tsp crushed garlic
- 1 tbsp curry powder
- 1/2 tsp ginger
- 1 tsp honey/maple syrup
How to make a curried chicken salad bowl?
- Cut the chicken into smaller pieces
- Bake in the pan with curry and smoked paprika powder with some coconut oil
- Cook the quinoa according to the package
- Cut the cucumber and apple in small
- Make the dressing with the olive oil, coconut yogurt, tahini, lemon juice, honey and remaining herbs
- Craft the salad by using the rocket, cucumber, apple, chicken, quinoa, almonds and dressing
This curry chicken salad bowl is like a budda bowl basically. Lots of different veggies and yummyness and full of nutrients. I choose to add quinoa in this meal to have a bit higher protein and a better stable balance with my blood sugar levels, but you can also choose rice or even pasta as your carb. If you are vegan, you may want to swap your chicken out for tofu/tempeh/legumes. If I were to choose I can also easily swap this for some roasted chickpeas. Use the same herbs and roast them in the oven for 40 minutes on 200 degrees.
To make this curried chicken salad bowl, you want to start by cutting the chicken into smaller pieces. Then bake them until tender and fully cooked in a pan with some coconut oil. Also add in the curry and smoked paprika powder and make sure the chicken is nicely coated in it. Meanwhile cook the quinoa according to your own package. And to make this meal super multitasking, you can also start cutting the cucumber and apple into smaller pieces as well.
Lastly you are going to make the dressing. Take a small bowl and add in the olive oil, coconut yogurt, lemon juice, honey and all the remaining herbs. Mix well until you get a smooth dressing. When the quinoa and chicken are done, you can start building the salad. Divide the rocket mix over two bowls following by the quinoa, apple, cucumber and chicken. Top it off with some almonds and the dressing.
