This sweet sweet corn chowder sooths your soul and is a rich soup full of flavour.
What do you need to make the corn chowder?
For 4 people
- 1 large sweet potato
- 2 cans of corn
- 1 can coconut milk
- 1 broth cube
- 1 onion
- 1 tbsp crushed garlic
- 2 tbsp curry powder
- optional: sesame seeds and coriander
How do you make the corn chowder?
- Peel the sweet potato and cut it in cubes
- Peel and cut the onion
- Bake the sweet potato and onion in a pan nice and soft.
- Add the corn, coconut milk, broth and all the herbs to the sweet potato
- Let the chowder simmer for 10 minutes
- Scoop about 1/3 of the chowder into a blender and soup for a creamy soup.
- Add back into the chowder and simmer it for a few minutes more
- Serve the corn chowder with some sesame seeds and coriander.
The first time I’ve heard about chowder was my second time in the US when my beloved friend showed me around Cape Cod, the place where she used to live as a kid. She took me to her favorite cafe where she loved the clam chowder so much. I didn’t even know what is was really, to me it just seemed like a soup. And in some way it is. Or a curry if you will. Either way, this dinner is rich in flavour, and has a bite with all the veggies but also the creaminess with the souplike curry sauce. And then there is the fact that you will be eating a lot of veggies but it will also taste pretty sweet. With the corn and the sweet potato this corn chowder you will be really soothing your sweettooth.
With a can of corn stocked up in my kitchen cupboard and my craving for sweet potato, I thought to myself: can I not combine both of them together? So I started to peel and cut the sweet potato into cubes and bake them soft in a pan. I also cut an onion and added that into the pan as well. You can add the herbs whenever you like, but I like adding them onto the sweet potato, so that it will give the potato extra flavour in a grill kind of way. After adding the herbs and when the sweet potatoes are a little bit more soft, you can add the corn, coconut milk and broth.
Let the corn chowder simmer for at least 10 minutes so that it can get the flavour it needs. And you scoop about 1/3 of the chowder into a blender and blend it until you get a soup consistency. Add the soup back into the chowder and then you let the corn chowder sit for a few minutes more. Serve the corn chowder with some sesame seeds and coriander.
