Did someone say chocolate?! This chocolate sweet potato parfait with apple, coconut yoghurt and walnuts is a perfect, delicious and nutricious breakfast to treat yourself with on the weekend (or really any day haha)!
What do you need?
For 2 parfaits
- 1 medium to large sweet potato
- 2 tbsp raw cacao powder
- optional: 1 tbsp honey/maple syrup & 1 tbsp chocolate protein powder
- 1/2 cup coconut yogurt
- 1 apple
- toppings like cacao nibs and walnuts
How do you make the chocolate sweet potato parfait?
- Cook the sweet potato in one of the 2 following ways: pinch holes with a fork into the potato and microwave it for 3 to 5 minutes or bake the sweet potato in the oven for 40 minuten on 180 degrees.
- Mash the sweet potato and add the cacao powder to it.
- Mix it optionally with some honey to make it a bit sweeter or add a scoop of protein powder to add more protein into your breakfast.
- Cut the apple into smaller cubes
- Grab 2 glasses or bowls and make the layers by scooping in the cacao layer, some apple and coconut yoghurt.
- Repeat once more and end with the cacao layer.
- Finish of with some toppings of your choosing like extra apple, cacao nibs and walnuts.
This beautiful and tasteful breakfast is full of goodness. You might think, why do we put vegetables in my breakfast? Well, the thing is that sweet potato (hint for the name) is sweet. So that makes it perfect for a sweet breakfast. Why you ask? Sweet potatoes fall under the root vegetables and these are known to have a lot of fiber in them, gives your good gut bacteria a boost and it lowers high levels of blood glucose so that you don’t have as many cravings and can prevent diabetes from happening. Sweet potato, together with apple and walnuts are also beautiful foods to eat during your luteal phase of your menstrual cycle to flush out the high peak of estrogene in your body as a result to build your uterus lining.
And apple and walnuts have each the same effect. It will help you to reduce blood sugar and are linked to lowering diabetes. Eating these foods really helps then to reduce your PMS and irritated, hangry attacks which will happen when your estrogene levels are higher than your progesterone. Walnuts are also full of omega 3 and this is helpful for your serotonin production. And as serotonin is known as your happy hormone, eating these foods will actually make you feel happier!
After this scientific talk about why you should eat this despite the fact that it is really yummy, let’s talk about how to make this parfait! The result is that we need a soft and mashable sweet potato. And the trick to do so can be achieved in two ways. If you are hungry, can’t be bothered or don’t want to wait too long, your solution is the microwave. Attack 😉 the sweet potato with your fork to put some holes in there for air and then put it into the microwave for about 3 to 5 minutes depending on how big your sweet potato is. Also don’t forget to turn it around every now and then. If you don’t have or don’t want to use a microwave, then an oven is your option. Preheat the oven on 180 degrees and let the sweet potato cook in there for about 40 minutes.
After the sweet potato has cooled down, you can then make the chocolate mousse if you will. Remove the skin from the potato and mash it into a bowl. Add the cacao powder and mix. If you want it sweeter you can add some honey or maple syrup. If you love to have a bit more protein, you can add a scoop (or 2) to your mousse as well. Especially a chocolate one will make it even chocolatier and creamier too. Also cut an apple into little cubes. Then it is layer time! Grab 2 glasses or mason jars or whatever you fancy and start of with a layer of the chocolate mousse, followed by a layer of apple and coconut yoghurt. Repeat the layers again and finish with the chocolate mousse. Then add some toppings like the remaining apple, cacao nibs and walnuts or choose whatever you feel like this morning. Bon appetit!
