Crunchy cookies for an arvo snack with enough protein to fill you up and enough sweetness to cover your sweettooth.
What do you need for the chickpea cookies?
For 12 cookies
- 1 can of chickpeas
- 1/2 cup of peanut butter
- 1/2 cup of maple syrup
- 1/4 cup of raisins
- 1/4 cup of oats
- 1/4 cup of coconut oil
- 1 ts lemon juice
- 1 ts cinnamon
- pinch of salt
How do you make the chickpea cookies?
- Preheat the oven at 200 degrees
- Put all the ingredients except the raisins in a kitchen machine and blend
- Stir in the raisins
- Form cookies from the batter and place it onto the baking tray
- Bake the cookies for about 25 minutes
- Let the cookies cool down so that they get nice and crispy
I have fallen into a baking spurt lately and especially baking with even more natural, healthy goodies full of protein. I find that using legumes like chickpeas and black beans really are amazing for baking, giving it lots of protein and a moist and yummy adding to the cake or cookie. And it is such an easy way to get some extra veggies in as well. And I promise you, combined with all the other ingredients, you don’t even taste a bit of it!
To make these chickpea cookies, you will want to preheat the oven at 200 degrees. Then you will need a kitchen aid to make the cookies. You can do it by hand and with a fork, but let’s be honest. We need those cookies asap and life is too short to be mucking around and to take the long road, right?!
So to make these yummy chickpea cookies you will put all the ingredients from the list in the kitchen aid, except for the raisins. So that is the chickpeas, the peanut butter, salt, maple syrup, oats, coconut oil, lemon juice and cinnamon. The cinnamon will add some extra flavour, and it is also an anti-inflammatory ingredient that will keep your blood sugar levels stable as well. Mix everything together until you get a nice and firm cookie batter.
When the batter is done, you can stir in the raisins. Of course, when you want a little bit of other yummy sweetness, you can exchange the raisins for chocolate or add them as well. Grab a baking tray and put some baking paper on it. Make the cookies by getting the batter tablespoon by tablespoon, roll the batter in a ball and then smash them into a cookie. Make around 12 cookies, place them on the tray and bake them around 25 minutes. Let the cookies cool down for them to become more crispy.
