These bliss balls, mostly made out of almonds and coconut, are the perfect little pick me up treat, for that dreading, grey afternoon, or just when you miss snow. Because if you don’t have snow, you might as well eat these almond coconut snowballs ;).
What do you need?
For 12 snowballs
- 1 cup almond meal (or almonds)
- 1 cup shredded coconut
- 1/4 cup coconut milk
- 1/4 cup maple syrup or honey
- 2 Tbsp coconut oil
- Little bowl of shredded coconut
- 25 gr 85% dark chocolate
How do you make the almond coconut snowballs?
- Grind the almonds to meal if not having almond meal
- Put the almond meal, shredded coconut, coconut milk, coconut oil and maple syrup in a kitchen aid and mix untill well combined and stick well together.
- Roll the dough into 12 little balls
- Roll each ball through the shredded coconut
- Melt the dark chocolate au bain marie or in the microwave
- Drizzle the chocolate over the almond coconut snowballs
It is beginning to look a lot like Christmas. Or at least winter with heaps of snow :). In the end these are just bliss balls (just she says, do I even know how tasty these are? There is nothing just about these yummy treats) And because they are rolled through some shredded coconut, you not only add a bit of crunch to them, they also look like snowballs. And by not having snow here in Australia, I just deal with these snowballs instead. At least I can eat it haha.
The almond coconut snowballs are a nice treat to share with people or just to have a couple of them in the arvo when you are getting into your typical I wanna stop work and go and sleep moment of the day. Stating more to the point: this is your ideal pick me up snack. You can even make them into bigger balls to make it easier for you and control portion size haha. Either way, they are yummy in your tummy!
They yummyness will be coming your way very soon as there is not baking needed and it is basically just combining all the ingredients in the kitchen. So how do you make the almond coconut snowballs? First of, if you are using whole almonds, you want to make almond meal out of this. You can do this very easily by putting the almonds into your kitchen aid and pulse it until it becomes almond meal.
Leave the almond meal in your kitchen aid and add all the remaining ingredients for the almond coconut balls by adding in the shredded coconut, coconut oil, maple syrup and coconut milk. Mix it until you get a ball of dough that easily sticks together. Then roll 12 balls out of the dough. Put some shredded coconut in a little bowl and roll each ball through the coconut, covering every bit by the coconut. Then melt some dark chocolate by either melting it au bain marie or using a microwave. Place the balls on a plate and drizzle the chocolate over them. Put the plate into the fridge to cool down the chocolate and make it nice and crispy. You later can transfer the almond coconut balls into an airtight container so you can keep them fresh for longer in the fridge.
